Serving as the food design and testing facility for am/pm foods for over 5 years, Mood for Food had quantified the unique needs of the convenient food environment where food is often maintained hot. Mood for Food used a proven array of analytical tools to define equipment requirements for optimal food quality. Mood for Food’s depth of analysis uncovered design improvements that enhanced the user interfaces for the operator and the customer. Armed with comprehensive list of specifications, Hatco, a leading foodservice equipment manufacturer, propelled new technologies in hot holding. The expertise of Mood for Food was again sought to test the functionality of a prototype heated holding cabinet. The testing methodologies quantified the reliability of the design and the significant improvement of the food quality. The new cabinet was launched into the am/pm stores resulting in tastier food, attractive merchandising and operational ease.
